Pieces of truffles, extra quality truffles, come from skinned truffle which do not satisfy anymore the naming of truffle, but also healthy parts of imperfect truffles, worked meticulously  with surgical scalpel. Of various size, quality (black texture interlaced filaments disappear during cooking) is excellent but their form only allows certain uses: charcuterie in specialties (galantines, terrines de foie…), restoration for fine cuisine.
